Summer Seafood and Wine

Summer is here!! 

The season of fantastic wine and seafood.

While there are no set rules for pairing wines and food,  it helps to keep the texture of the dish in mind while pairing it with a wine.

Here are a few dishes from the sea and a few wines that you may want to pair with them.

Shrimp:
Chardonnay or Chenin Blanc
(if you prefer breaded or tempura shrimp, go with a Sparkling Brut or a nice  Micro Brew)

Crab:
Sparkling Brut or dry Riesling

Tuna:
whites and reds will pair nicely
Sauvignon Blanc, Chardonnay, Pinot Noir, or Merlot

Sushi:
Dry Reisling or Sparkling Brut

Salmon or Swordfish:
Because of its weightier texture, you can go with either white or red.
Pinot Noir is a perfect match!

Raw Oysters:
Sauvignon Blanc, Sparkling Brut, Chardonnay, or dry Chenin Blanc

You’ll find that a well paired wine and food can make all the difference! The wine enhancing the flavor of the food and the food intensifying the qualities of the wine.  The best part is it doesn’t have to be expensive- just pair simple, great tasting wine with great tasting food!

Hire an Artist for your Wedding Day!

Want to impress your wedding guests? Look for something out of the ordinary that guests can take with them to remember your special day. Nothing surprises your guests like having a professional artist to “capture” them on the spot.

Today’s  brides are definitely looking to stamp their own style and personality on their weddings. Adding something that will make their reception their own, and make their day stand out is what every bride is looking for. After all, what bride doesn’t want their wedding to be the talk of the year?

If your reception is formal or vintage, consider hiring a silhouette artist to cut traditional profiles of the guests.  Many find watching a live artist entertaining and even educational. There are very few Silhouette Artists in America today and many guests have never had their profile created. Seeing their image emerge in just seconds from simple black paper and scissors will likely wow your guests.

If you prefer FUN rather than tradition, you may want to provide a caricature artist.  Caricatures will surely make your guests laugh and create a fun-filled wedding celebration. The drawing becomes your guest’s one-of-a-kind wedding favor, and will likely not be left behind.

There are also artists who will bring an easel and create a painting of the crowd at your wedding reception! This makes a great gift for the happy couple and is even fun for guests to watch.

After all, every wedding has guests, food, flowers and music.  It’s the special ones that put in the extra effort to help make the day unforgettable for all.

The Newest Trends in Wedding Linen

Now it’s all about color, texture, layers and personal expression at your reception. We’ve identified six new creative styles appearing in wedding reception designs.

#1 – Bold colors

Color in weddings is hot right now!  Any color  that you choose will offer a huge variety of shades that are stylish and classy. Really, there isn’t any color that’s “off limits”.  If  your favorite color is green, you can select from Apple, Lime, Turquoise, Sage, Teal, and  the list goes on!  Some new colors worth listing are persimmon – a spicy, vibrant shade of orange; saffron – a bold, deep yellow; and butter – a warm, soft yellow.


#2 – Texture

Texture, from gowns to linens, is huge. This can mean a crushed look, pintuck fabrics, damasks, or other tone-on-tone fabrics. You can also show texture through layers, such as using sheer overlays on tables or buffets. Finish this look with accessories such as beaded candlesticks and votives.

 


#3 –Metal
You may have noticed that metallic is everywhere in fashion today! Metals can be incorporated into your reception design, through metallic fabrics, candle accessories, vases, or even the furniture.

 

 

#4 – Grey hues
As mentioned above grey hues & metals such as silver, aluminum or nickel are smoking right now! Try using a brushed nickel planter for your table centerpieces. There are endless styles and shades of linens in grey tones that can create a beautiful, trendy look. Why not accent with other colors such as white, aqua or any shade of red from raspberry to pink to fuscia.  Have fun with it!

 


#5 – Lace is making a comeback

In bridal gowns to wedding design, lace has made a big comeback after disappearing for many years. It’s a terrific way to add a sense of tradition, history and romance into your wedding. Table linens come in a variety of tone-on-tone laces, and even colorful options as well. Adding a lace overlay to a solid color fabric can beautiful.

 

 

#6 – Geometric designs
Looking for a clean, modern day  look? Think about applying some retro design elements. Choose funky styles that use lots of color and geometric designs such as white, bubblegum pink and chocolate brown. If you’re looking for something a little more elegant, try using a geometrically designed fabric like a pintuck. Pintuck fabrics are gaining popularity and add a pop of modern, yet classy style to your reception.

Not your typical Wedding Reception

The typical Wedding reception is a thing of the past.  Brides and grooms are dabbling with new trends in food and cocktail choices!

Couples are steering away from the common reception offering a simple plated meal with cake to follow. Couples are choosing menu options that are fun, trendy, and delicious!.

Finger foods and hors d’ oeuvres are becoming popular choices for the evening. Of course, they should be filling if this choice is made.

Our most popular items include mini crab cakes, wellingtons, shrimp cocktail, chimichangas, empanadas, and crostini. Why not incorporate your favorite comfort foods into the reception as well.  When presented in a elegant, yet fun manner, corn dog skewers, assorted popcorns, French fries, and Mac-n-cheese bites can be a hit!

Another popular trend is to serve appetizers in edible carriers. Some examples include spinach dip served in edible spoons, Caesar salad bites in parmesan crusted phyllo cups, or shrimp bruschetta served on toast rounds.

Signature cocktails are also a fantastic way to make a reception or cocktail hour one to remember. We  work with couples to create a beverage that coincides with their theme and desired color scheme. Clever names are also a great way to spice up the reception.  Some fun examples include a “Beach-tini” at a beach-themed wedding or a “Butler-politan” at the Butler wedding?

If you’re looking for ways to keep your guests mingling, offer food stations. Some fun ideas for stations include potato martini bars, pasta stations, or candy buffets.

Of course, when choosing a passed menu, the venue is just as important.  The Maitland Art Museum,         Heaven Event Center, and the Orlando Museum of Art are all exceptional choices.  They all offer plenty of room to walk around, as well as stunning art and decor.

As you can see, your options are limitless.  This is your day, so make it one to remember!

Orlando Caterer: Creations Catering & Events

Had a great time at the Orlando Museum of Art’s First Thursday. It was great seeing everyone support local Art and fine food! We would like to thank the Museum for choosing Creations Catering & Events as the Orlando Caterer to provide the food.

The was a lot of great Sci-Fi talent last night…dancing, performances, and fabulous Art.  The dancing Robots were very entertaining…how unique!  Also enjoyed the exotic belly dancers!

I think I’ll make this a monthly event.

Wedding Season is Approaching!!!!

For those of you who got engaged over the Holidays, its time to start shopping for the “Perfect Wedding Dress”.  BUT, don’t forget to find the “Perfect Caterer” as well!!

One of the first things to do is book your Caterer after you set a date.  You want to give yourself enough time to make sure you can get the date you want!  The time between March, April, & May is Florida’s peak wedding season. Don’t let your “perfect day get away”!

We had to feed 175 people for our wedding and we had a budget… We shopped around and as soon as we had our tasting with creations, we knew. The food was amazing! We had so many compliments from our guests – especially the Mac and Cheese! Thank you for the delicious food and great service.

Champagne Cocktail

 

 

 

 

 

 

 

 

 

 

Ingredients

  • 2 quarts cranberry juice cocktail
  • 8 slices (quarter size and about 1/8 in. thick) peeled fresh ginger
  • 2 cinnamon sticks (about 3 in. long)
  • 2 whole star anise
  • 1/3 cup cognac or brandy
  • 8 cups Champagne or other sparkling wine (about 2 2/3 bottles, 750 ml. each), chilled
  • 32 to 48 fresh cranberries, rinsed, or frozen cranberries (optional)

Preparation

  1. 1. In a 3 1/2- to 4-quart pan, combine cranberry juice, ginger, cinnamon sticks, and star anise. Boil over high heat until reduced to 2 cups, about 1 hour. Let cool about 30 minutes, then pour through a fine strainer into a small pitcher. Chill syrup until cold, at least 1 1/2 hours.
  2. 2. For each serving, pour 2 tablespoons of the cranberry syrup and 1 teaspoon cognac into a Champagne flute (6 to 8 oz.). Add 1/2 cup (4 oz.) Champagne. Garnish with 2 or 3 cranberries if desired.
